Food is Love: Banana Bread

More often than not, when my monkeys aren’t eating me out of my house, bananas go bad in our kitchen. But fear not! This is just an excuse to make banana bread and the boys love it as the bananas turn from yellow to brown.

My nursing school bestie Liz shared her easy peasy banana bread recipe with me years ago and I’ve tweaked it to share with you! No hand-mixer required and thus far, my favorite recipe!

Banana Bread

No mixer required banana bread!

Total Time 1 hour 10 minutes
Servings 6

Ingredients

  • 3-4 ripe bananas smashed
  • 1/4 cup melted butter
  • 1 egg beaten
  • 1-1/2 tsp vanilla
  • 3/4 cup sugar
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1-1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts optional
  • 1 cup chocolate chips optional

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large mixing bowl, smash bananas. Mix butter in.

  3. In another bowl, combine sugar, egg, and vanilla together; pour into banana mixture.

  4. In another mixing bowl, combine flour, cinnamon, baking soda, and salt. Pour into banana mixture and mix well.

  5. Add optional walnuts and/or chocolate chips (my favorite part).

  6. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour.

  7. When golden brown, remove loaf from the oven and let it sit for 15-20 minutes on a cooling rack until cooled.

  8. Remove banana bread from pan and serve.

Recipe Notes

The amount of sugar can be adjusted up or down usually depending on how ripe your bananas are and to your preference. I'm a natural sweet tooth so you already know what I do.
